Buffet Style Baja Grain Bowls

Ingredients
  

  • 3 cups rice, cooked
  • 3 cup quinoa, cooked
  • 28 ounces black beans, drained and rinsed
  • 28 ounces corn, drained
  • 1 avocado, thinly sliced
  • 2-3 tomatoes, diced
  • 1 ½ cup feta, crumbled (the whole container)
  • ½ cup cilantro, chopped
  • 1 cup sour cream

CILANTRO LIME VINAIGRETTE

  • ¾ cup lime juice
  • 3 tablespoons honey
  • 1 cup cilantro, chopped
  • 8 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 pinch crushed red pepper flakes
  • 1 cup extra virgin olive oil

Instructions

  • Combine lime juice, honey, garlic, cilantro, salt, pepper, pepper flakes and olive oil.
  • Cook rice and quinoa separately. Toss with some vinaigrette.
  • Serve buffet style with black beans, corn, avocado, tomatoes, feta, cilantro, sour cream, and remaining vinaigrette.
